Rice Stuffed Poblano Peppers with Woodwork Chardonnay

Weeknight dinners are tough! Yes, I know I don't have fifty two children to feed, but sometimes I look at up at 4p and go !@#$%^&!!! I have no plan for dinner. For someone who HATES peppers, I have taken quite a hankering to a new recipe:Rice Stuffed Poblano Peppers. Originally from Blue Apron, I have made this recipe three times, I am obsessed. This is also a great recipe to will in fall as we are still enduring 90 degree temps in Florida. Trust me, this is an easy weeknight dinner to make!

Ingredients
½ Cup Long Grain White Rice
3 Cloves Garlic
1 Bunch Cilantro
1 Lime
1 Yellow Onion
2 Poblano Peppers
10 Ounces Ground Beef
3 Tablespoons Dried Currants
3 Tablespoons Roasted Pepitas
2 Tablespoons Tomato Paste
2 Teaspoons Ground Cumin
¼ Cup Mexican Crema

It is a tad spicy though and I have an amazing pairing! Woodwork™ Chardonnay, new from Diageo Chateau & Estates. There is a nice fruity balance that takes the bite out of the spicy poblano.
