Asparagus, Goat Cheese, Shrimp Risotto + 14 Hands Wine

Although it is Africa hot, it has been very very rainy and everyone is craving comfort food. This is my favorite risotto recipe, not my absolute favorite but that one takes so long to make this one is great for a quick delicious meal. Thanks to the website LaaLoosh, it is Weight Watchers friendly coming in with just 6 points. This is hard to believe, the goat cheese makes it tastes so decadent, you won't believe it!

I chose to pair this with 14 Hands Chardonnay. I think goat cheese and shrimp with a white wine is the way to go. This Chardonnay offers bright aromas of apples and pears with a touch of caramel and spice. Elegant fruit flavors give way to hints of butter and vanilla, ending with a juicy finish.

Daytona International Speedway Sign Demolition

This actually hurts my heart, but am excited for what is to come! 

DAYTONA BEACH, Fla. – The Daytona International Speedway identification sign, which stands 57 feet tall and 48 feet wide along International Speedway Boulevard, was demolished on Thursday morning as part of the DAYTONA Rising project, the $400 million frontstretch redevelopment scheduled for completion in January 2016.

The demolition process took only a few hours for the sign, which was originally unveiled in January 1994.

DAYTONA Rising is scheduled for completion in January 2016 in time for the 54th anniversary of the Rolex 24 At Daytona and the 58th annual DAYTONA 500.

DAYTONA Rising is a $400 million reimagining of an American icon – Daytona International Speedway. Five expanded and redesigned entrances, or “injectors,” will lead fans to a series of escalators and elevators, transporting them to three different concourse levels. Each level features spacious social areas, or “neighborhoods,” along the nearly mile-long frontstretch. At the conclusion of the redevelopment, Daytona International Speedway will have approximately 101,500 permanent, wider and more comfortable seats, twice as many restrooms and three times as many concession stands. In addition, the Speedway will feature over 60 luxury suites with track side views and a completely revamped hospitality experience for corporate guests. DAYTONA Rising: Reimagining an American Icon, expected to create 6,300 jobs, $300 million in labor income and over $80 million in tax revenue, will be completed in time for the 2016 Rolex 24 At Daytona and DAYTONA 500.

Barton Malow is serving as the design-builder for the project. In addition to DAYTONA Rising, Barton Malow has renovated the University of Michigan “Big House” and the Rose Bowl.

ROSSETTI, an award-winning architectural design and planning firm for the past 40 years, which headed the design for Ford Field NFL Stadium, University of Notre Dame Compton Family Ice Arena and five Major League Soccer Stadiums, is leading the master planning of the DAYTONA Rising site.

We had the most AMAZING dinner at the Hyatt Regency Orlando a couple of weeks ago. This is our third or fourth time dining at their different options but this one takes the cake. The Steak was as big as my head! I loved every second of our meal, our apps and oh the wine! This is perfect for date night or a night out with friends. Friday Five-Five Favorite Summer Fruits/Veggies

Today I linked up with Eat, Pray, Run DC and You Signed Up for What, and Mar on the Run for this fun Friday Five.

The theme this week is Five Favorite Summer Fruits/Veggies!

Summer means awesome summer cooking!
My five faves? 

1. Avocado, I could eat this recipe every day.





2. Strawberries. Because Nutella.  

3. Plum Tomatoes, I HATE raw tomatoes on sandwich...but I love bloodys, ketchup, tomato soup and I was taught two Mother's Day ago by my aunt how to can plum tomatoes....you will never go back! Trust me! 


4. Watermelon, if you haven't combined feta, watermelon, basil and balsamic...you haven't lived and we can't be friends.  

5. Grilled Romaine. I could actually do this in February, December, May, June...you understand what I mean....but it's amazing and you need to do it ASAP! This was my first attempt a year ago, angels sang!
