Skinny and Clean-Kale, Swiss Chard, Chicken, and Feta Salad

It is getting to the point that I may have to have a section of my blog just for kale. But this recipe is special. The beau has been gone all week and I have been really lazy with the grocery shopping. After a good run yesterday morning, I went to yoga last night and when I came out of some delicious Yin...I had a text message-Kale and Chicken Salad for dinner. I actually thought he was joking. But, turns out I came home and the house smelled like a restaurant. 

We were able to use our organic kale that we had leftover from our Front Porch Pickings. We didn't do the Swiss Chard, but the next time we make it we will...also think that we will use goat cheese instead of feta...the dressing is AWESOME. Check out the recipe here.

  • Dressing:
  • 1/2 cup cider vinegar
  • 2 teaspoons honey
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano (optional)
  • 1/2 cup olive oil
